Sloppy Joes
Ingredients
- 2 tbsp olive oil
- 1 medium onion
- 1/2 poblano (or green pepper if desired)
- 2 cloves garlic
- 2 lb ground beef
- 1 c. chicken stock
- 2 tsp paprika
- 2/3 c. barbecue sauce
- 1/2 c. ketchup
- 1/4 c. soy sauce
- 3 tbsp Worcestershire sauce
- 3 tbsp tomato paste
- salt and pepper to taste
Method
Heat the olive oil over medium heat in a wide pan. Add the onion and pepper and a pinch of salt and soften until onion is translucent, about 7 minutes. Add the garlic and cook until fragrant, about 1 minute.
Increase the heat to medium high/high and add the ground beef and brown until cooked through.
Deglaze with the chicken stock, scraping the bottom of the pan with a wooden spoon. Add the ketchup, soy sauce, barbecue sauce, Worcestershire, and tomato paste. Bring to a simmer and lower heat, maintaining the simmer. Simmer until desired consistency is met. Add salt and pepper to taste. Serve over bread or in hamburger buns.
Notes
I use this recipe because ready made sloppy joe mixes aren't necessarily gluten free, and I have a family member that has Celiac's. If you are in a similar situation, be sure to get a gluten free soy sauce and barbecue sauce. This makes a lot, but my family loves sloppy joes.
